Chicken legs in the sauce

Ingredients

  • 500g of potatoes
  • 2 fresh chives
  • 2 cloves of garlic
  • 2 tablespoons of extra virgin olive oil
  • 6 chicken thighs without skin
  • 5 tomatoes
  • 200g chicken broth
  • Thyme or Oregano (optional)

How to prepare chicken legs in the sauce

We preheat the oven to 200º heat up and down. Cut the potatoes into medium pieces and the chives into strips and garlic into small pieces. We put salt and pepper and we have everything in a dish suitable for baking, we bake for 15 minutes.

Meanwhile in a frying pan, brown the chicken thighs with a teaspoon of olive oil, they have to take a light color but remain raw since we are going to make them in the oven.

After the time, remove the casserole from the oven, incorporate the chicken thighs, the tomato into segments and pour the chicken broth, a pinch of more salt and a touch of pepper, finally a teaspoon of olive oil. We return to the oven until the chicken is well browned and the tomatoes are roasted, approximately 40 minutes at 180º, heat up and down.

After the time we removed the source of the oven and served quickly.
Tips:
The tomatoes should be as red and more mature as you can find, so they will be juicy and very aromatic.
You can add any fresh herb that you like, thyme or oregano will bring a delicious touch.
